This holiday season, we’re thankful only to be catching Cabin Fever if all goes well. It looks like we’ll be confined to our homes, but on a lighter note, that means no need for a designated driver! We figured we could take our time crafting a couple of cold cocktails while we decorate the home for the holidays this year. By the time you try each of our sparkling signature holiday drinks, drinking responsibly will never have looked so good.
Traditionally, the drinks we offer at our events through Personal Touch Dining are Spring or Summer themed since our event season ends mid-November. We get rave reviews over their Grapefruit Mojito, and they even offer “Logo Cocktails” now! These are the newest way to send a message while delighting your impressed guests! Imagine each of these holiday drinks with your signature logo on top for the perfect viral social media post. If you’re like us, we’re looking to take the nostalgia of a perfect Harbor View Loft Christmas and mix in a little extra fun. Downtown San Diego is bubbly and bright all year round, so Champagne-centered cocktails seemed perfect to complement our beautiful modern venue. From now until New Year’s Eve, these drinks are sure to put a little spring in your step while you pad around the house in your favorite footie-pajamas!

Unless the flavor of the Champagne really matters in the drink you’re making (like in the Classic Champagne cocktail); generally, inexpensive alternatives such as California sparkling wine, or Prosecco work well.
Remember to pour the mixers first, then top off with champagne to avoid a fizzy overflow!
Classic Champagne Cocktail
Here’s the easiest drink recipe that has the most stunning result. Perfect for NYE or any other holiday this season, it’ll bring a little extra glitz to your home. Adding a sugar cube to champagne makes a fountain of bubbles that positively sparkle! We love this drink because it takes any casual party to fancy celebration status with just a few simple ingredients. Here’s all you need:
- 1 Sugar Cube
- 1-3 dashes of Angostura bitters
- Champagne
- Maraschino cherry or lemon twist garnish.
Instructions
Outside of your champagne flute, soak a sugar cube in bitters. Once saturated, drop it into the glass and try to hold back your excitement as you carefully pour in the champagne as well. We recommend garnishing with a cherry or lemon twist, and then it’s ready to drink!
Poinsettia Pomegranate Spritzer
It’s sophisticated and refreshing: floral, botanical, tangy, and bubbly all at once. Get ready to fall in love as soon as you take your first sip. We’ve made a St. Germain’s bottle a permanent part of our bars at home; it brings the floral notes to this delicious cocktail. Imagine drinking this one at holiday parties, New Year’s Eve, or celebrating getting that big promotion or anniversary! What’s in this St Germain champagne cocktail?
- 1 oz pomegranate juice
- 4 oz Champagne or sparkling white wine
- 1 oz St. Germain elderflower liqueur
- 2 oz club soda
- 1-2 Tbsp fresh pomegranate seeds
Instructions
In a champagne flute, add pomegranate juice, St. Germain, sparkling white wine, and top with club soda. Garnish with a sprinkle of fresh pomegranate seeds, then taste and adjust ingredients to your desired taste!
Jack Frost Mimosas
These icy blue mimosas are just the drink to class up your holiday brunch! With such an overabundance of red and green, we thought switching up your breakfast drinks might be fun. Be sure to refrigerate both your bubbly and your Blue Curacao so when you’re ready to assemble; your drinks are already chilled!
- 1 slice of lemon
- 2 tbsp. granulated sugar
- Blue Curacao
- 1 bottle Champagne or Prosecco
- Lemonade
Instructions
Place sugar on a small plate. Circle the rim of each champagne flute with a lemon wedge, and dip the rim into the sugar for that “frosted” look. Pour a drizzle of Blue Curacao into the glass. Fill halfway with Champagne, then top off with lemonade!
